세계화의 산물, 한국 대중들의 술인 ‘소주’는 어떤 술인가?

‘세계화’라는 용어가 널리 쓰인 것은 아마도 김영삼 정권(YS 정권) 이후이다. 정치적 의미가 다분히 개입된 개념이었다. 그러나 우리 주변에는 알게 모르게 세계화의 산물이 여러 곳에 있다. 유구한 역사 속에 존재하면서 또 변화된 모습으로 이어져 오고 있다. 한국의 대중 술인 소주(燒酒)가 세계화의 산물임을 잘 모르는 듯하다. 

 

흔히들 ‘소주(안동소주 등)’를 우리 전통 술이라고 여긴다. 오랜 기간 그렇게 알고 있고, 맞는 말일 수 있다. 그런데 소주는 몽골 제국의 유산이다. 중국이나 우리나라 등 고대 동양에서는 누룩을 만들어 양조(釀造) 했다. 

알코올 발효 도수로 치면 최고 15~16도 정도다. 반면 페르시아를 위시한 중동에서는 선인장을 활용해 향수를 만들었다. 이들은 놀랍게도 증류법을 고안했다. 몽골은 인류 역사상 최대의 제국을 만들어 갈 때 증류법에 관심을 가지게 된다. 이것이 중국으로 역수입되어 고량주의 기원이다. 참으로 아이러니한 사실이다. 증류주는 몽골의 속국이었던 고려에도 큰 영향을 미친다. 당시 개경·안동·진도를 중심으로 증류식 소주 제조법이 발전하게 된다. 

 

증류식 소주는 결정적 결함을 갖고 있다. 알코올 도수가 40~60도에 달해 인기가 치솟지만 그에 비례해 증류 과정에서 양이 크게 줄어든다. 그러다 보니 고관 대작이 즐기는 형편이었으나 일반 민중-백성에까지 치명적 유혹에 빠져든다. 급기야 조선 시대는 술 제조로 인한 양곡 부족을 우려하는 상소문까지 자주 등장한다. 심지어 왕에 의한 금주령도 내려진다. 가뭄·홍수 등으로 곡물이 부족한 상황에서는 어김없이 금주령이다. 임금이나 양반 계층은 술을 몰래 마시기 위해 아픈 사람이 먹는 약주(藥酒)로 둘러대기도 한다. 오늘날 손위의 사람이 먹는 의미로 쓰이는 약주의 유래이다. 

 

근·현대에 들어서는 대중은 술인 ‘소주’와 관련된 더 슬픈 사연이 있다. 조선에서는 금주령의 기간을 제외하고는 술에 비교적 관대했다. 조상을 숭배하는 유교 사상의 영향도 있다. 일제는 한반도를 강제 병합하고 주세(酒稅)를 전격 도입한다. 술을 즐기는 우리 민족을 상대로 세금을 약탈하는 쉬운 도구였기 때문이다. 더불어 희석식 소주를 만드는 방법이 일본에서 들어온다. 주정을 만드는 공장도 주요 도시에 만들어진다. 우리나라의 전통 증류식 소주의 맥도 끊어진다. 일제에 의해 술맛까지 강탈당했다고 할까. 

 

 

해방 이후 양곡 부족 현상이 개선되지 않고 정부 재정 역시 미약하다. 주세 정책의 근간도 지속된다. 정부의 술 정책에 변화가 온 시점은 1988년 서울 올림픽이다. 2000년대 들어서야 다양한 방법으로 술 제조가 가능해지고 전통주도 복원된다. 100년간 이어져 온 ‘일제의 유산’이 막을 내린 셈이다. 

 

유교 사회인 조선에서는 음주 예절 교육이 있었다. 핵심 내용은 질서와 예절을 갖춘 음주를 권한다. 세종대왕은 역사 속에서 술로 인한 폐해 사례를 지적하고 모두가 경계해야 함을 강조하기도 했다. 많은 유학자도 술 예법을 가르쳤고 일부는 지금도 문화로 존재하고 있다. 선현들은 “술자리는 그냥 즐기는 것이고, 나쁜 술자리는 일 때문에 마시는 것”이라고 말한다.

 

그러나 대한민국이 급속히 발전하면서 술 문화도 많이 바뀐다. 소위 ‘폭탄주’로 대변된다. 폭탄주가 군사문화의 잔재임은 분명하다. 군에서 검찰로 승계되고, 힘 있는 자의 전유물로 여겨진다. 평등을 가장한 강제력의 소산이다. 

 

전혀 예상하지 못하는 반전(反轉)이 일어난다. 아재 또는 꼰대들은 눈치로 알 수 있다. 폭탄주 제조 방법이 무궁무진하다는 점을. 오죽하면 유튜브 영상에도 소개될 정도일까. 젊은 세대는 폭탄주를 강제성에서 창의성으로 바꾸어 버린다. 한국어를 배우는 외국인 학습자들이 한국의 회식 문화에 큰 관심을 보일 정도이다. K-POP, K-드라마 등 한류에 이은 ‘K-bomb’으로 부르기도 한다. 몽골 제국 때 들어온 소주의 재탄생으로 규정하고 싶은 마음이다.
